The cool story behind our company's founding and what makes us unique.

Founders, Rosalie Guillem, who was living in Florida and her daughter, Audrey Guillem-Saba, living in France, had a dream - to share delectable French macarons with the world and to reunite their family. The family, originally hailing from France, were surprised to find that the American take on the "macaron" was often simply sugar spun into a cookie shape or confused with the familiar coconut cookie "macaroon". They knew that with a little consumer education, and by treating the American palate to true French macarons, they could bring a taste and texture sensation to the marketplace in Canton.

In 2009, Rosalie and Audrey began sharing their delectable macarons with the American consumer market and opened their first Le Macaron French Pastries®. Because of the frequent requests from customers to open a Le Macaron French Pastries® pastry shop in their community the company began franchising in 2012. Our niche concept is unique, with very limited competition. Today's consumers are eager to engage with their food in new, creative ways. They want flavor and texture, quality, and presentation; they are more health conscience. We are located in the Belden Village Mall! Le Macaron French Pastries is a family and veteran owned business that is passionate about serving you the best French macarons in Canton and across the U.S. In 2010 owner, Luke Freshwater, graduated from ROTC and joined the United States Army as a commissioned officer. Like most members of the military, he wanted to be a part of something bigger than himself. After completing over a year of training he became an Explosive Ordnance Disposal (EOD) technician. The four years of active duty as an EOD officer and five years of serving in the reserves gave him the foundation necessary to develop leadership skills that he would use in civilian life.

As an officer in EOD, he was trained to lead teams in the safe disposal of IEDs or any other explosive hazards that may be a threat to personnel or property. Throughout his service, he not only saw fellow teammates triumph in the face of danger, but also develop into incredible people capable of doing the impossible. He knew the discipline and military training would be best used in a leadership role. Along with his father, John, they took the path of entrepreneurship and became owners of a Le Macaron French Pastries franchise. As a smokejumper parachuting into remote areas to combat wildfires, his father too had a high stress job. While a different setting from their past careers, being Le Macaron French Pastries franchisees has allowed them both to use their skill-sets to find success as entrepreneurs.

Luke is married to his amazing wife, Megan, who also helps with the business when she is not chasing around toddlers. They are proud parents of three young daughters, and Luke still currently serves in the U.S. Army Reserves as an Army officer in the Pittsburgh area.
